100% Pure Vermont Maple Syrup for Over 50 Years
Collins Tree Farm and Sugarhouse has made 100% pure Vermont maple syrup for over 50 years on family land. We only use sap from trees on our farm and a wood fired evaporator in keeping with the longstanding tradition of maple syrup production.
Since our sugarhouse is situated on a large parcel of land, we selectively cut our forest to keep it healthy and fuel our maple syrup operation. The use of wood as a heat source for reducing sap into maple syrup results in a mineral rich, concentrated maple flavor.
Maple syrup is graded according to color, flavor, and clarity. Each grade has its own flavor and color, and these characteristics are used to determine the grade of syrup.
The property, including the sugarbush areas, has been in the Collins family since 1936. It was purchased by Martin's parents, Joseph (Nick) and Hedwig Collins, who had both immigrated from Europe -- Nick from Hungary and Hedwig from Germany. They had planned to open a ski school, but, it didn't snow that first winter and their plans had to change. Nick worked in Boston as an engineer during the week and came home to work in the woods on the weekend while Hedwig took care of their sons, Martin and Christian, at the farm.
All of the sap-holding tanks and the evaporator pans are made of food-grade stainless steel. A vast gravity run system of plastic pipelines going to each tree and running into progressively larger plastic lines brings the sap down to the holding tanks at the sugarhouse.
The raw sap leaving the individual trees has an average sugar content of about 2%. To change this into maple syrup, evaporation must take place to raise the sugar content to 66%. From the holding tanks, sap is fed into the evaporator where it is boiled.
As the sap thickens and becomes maple syrup, it is drawn off from the evaporator. The maple syrup is stored in drums and hot packed into smaller containers according to the needs of our customers.
Light, golden color with a mild, delicate taste. Delicious topping for pancakes, waffles, ice cream or yogurt.
A light amber color and full-bodied flavor, this grade of syrup is the product of choice for consumers who desire the classic maple syrup flavor.
A dark amber color with a more pronounced maple flavor, this grade of maple syrup will satisfy those consumers who desire the strong flavors. It is great for baking and cooking since the flavor maintains its integrity.
